Vinification: The freshly harvested grapes are de-stemmed, and then left to steep in small vats for 72 hours at a temperature of 12°C to bring out the scents and the particular characteristics of the vine. A 10-day period of fermentation at 30-32°C is followed by submerged cap fermentation for 15 days at a temperature of 28°C. The drawing-off process only takes place when all the sugar has been turned into alcohol.
Ageing: This powerful wine begins its aging process with 14 months in small barrels of French oak, followed by another 9-10 months in traditional barrels to bring it to its peak of elegance. It is then transferred to bottles, where it matures for a year before being sold.
Sensory traits: This cru, the jewel in the company's crown, stands out for its bright ruby red color with slight orange hues, and its complex and enveloping bouquet where the varietal hints of wild rose blend with the aroma of sage. The fruity aspect then emerges, bringing to mind shrivelled blackberries, pressed sour black cherries and, to complete the picture, spices and wild overtones.
Food and wine combinations: A full-bodied wine that goes well with complex meat dishes and game in general, and brings out the qualities of seasoned cheeses.
Serving temperature: Serve at a temperature of 16-18°C.
Storage: Keep the bottle horizontal, in a cool and ventilated room, protected from direct light and vibrations.
